Brown Rice Veggie Meal Prep
Ingredients
- 2 cups brown rice
- 4 cups water
- 1 can (15 oz) chickpeas, drained
- 1 red bell pepper, diced
- 1 cup corn (frozen or canned)
- 1 zucchini, diced
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp garlic powder
- Salt and pepper
Instructions
- Cook brown rice in 4 cups water. Bring to boil, reduce heat, cover and cook 40-45 minutes.
- Preheat oven to 400°F.
- Toss chickpeas, bell pepper, zucchini, and corn with olive oil, cumin, garlic powder, salt, and pepper.
- Spread on a large baking sheet.
- Roast 20-25 minutes until vegetables are tender and chickpeas are crispy.
- Divide rice among 5 containers. Top with roasted vegetables and chickpeas.
- Refrigerate up to 4 days. Reheat in microwave 2 minutes.
