Ingredients

  • 2 cups brown rice
  • 4 cups water
  • 1 can (15 oz) chickpeas, drained
  • 1 red bell pepper, diced
  • 1 cup corn (frozen or canned)
  • 1 zucchini, diced
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt and pepper

Instructions

  1. Cook brown rice in 4 cups water. Bring to boil, reduce heat, cover and cook 40-45 minutes.
  2. Preheat oven to 400°F.
  3. Toss chickpeas, bell pepper, zucchini, and corn with olive oil, cumin, garlic powder, salt, and pepper.
  4. Spread on a large baking sheet.
  5. Roast 20-25 minutes until vegetables are tender and chickpeas are crispy.
  6. Divide rice among 5 containers. Top with roasted vegetables and chickpeas.
  7. Refrigerate up to 4 days. Reheat in microwave 2 minutes.
