Meal Prep Chicken Rice Bowls
Ingredients
- 2 lbs chicken thighs, boneless
- 2.5 cups white rice
- 5 cups water
- 2 cups broccoli florets
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp onion powder
- Salt and pepper
- 5 tbsp soy sauce (for serving)
Instructions
- Preheat oven to 400°F.
- Season chicken with olive oil, garlic powder, paprika, onion powder, salt, and pepper.
- Spread on a baking sheet. Bake 25-30 minutes until done.
- While chicken bakes, cook rice in 5 cups water. Bring to boil, cover, reduce heat, cook 18 minutes.
- Steam or microwave broccoli 4 minutes until tender.
- Slice chicken into strips.
- Divide rice, chicken, and broccoli evenly into 5 meal prep containers.
- Drizzle 1 tbsp soy sauce over each.
- Refrigerate up to 4 days.
