Ingredients

  • 1 lb chicken breast, cut into strips
  • 2 cups white rice, cooked
  • 2 cups frozen mixed vegetables
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp ginger (optional)
  • 1 tbsp vegetable oil

Instructions

  1. Cook rice according to package directions.
  2. Heat vegetable oil in a large wok or skillet over high heat.
  3. Add chicken strips. Cook 5-6 minutes until cooked through. Set aside.
  4. Add frozen vegetables to the same pan. Cook 3-4 minutes.
  5. Add garlic (and ginger). Cook 1 minute.
  6. Return chicken to the pan.
  7. Add soy sauce and sesame oil. Toss everything together.
  8. Serve immediately over rice.
