Lentil Soup
Ingredients
- 1.5 cups red lentils, rinsed
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 carrots, diced
- 1 can (14 oz) diced tomatoes
- 6 cups vegetable broth or water
- 1 tsp cumin
- 1 tsp turmeric
- 1/2 tsp paprika
- 2 tbsp olive oil
- Salt and pepper
- Lemon juice to serve
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and carrots. Cook 5 minutes until softened.
- Add garlic, cumin, turmeric, and paprika. Cook 1 minute.
- Add lentils, diced tomatoes, and broth. Stir well.
- Bring to a boil, then reduce to a simmer.
- Cook 20-25 minutes until lentils are soft.
- Blend partially with an immersion blender if desired.
- Season with salt, pepper, and a squeeze of lemon.
- Serve hot with crusty bread.
