Ingredients

  • 1.5 cups red lentils, rinsed
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable broth or water
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1/2 tsp paprika
  • 2 tbsp olive oil
  • Salt and pepper
  • Lemon juice to serve

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and carrots. Cook 5 minutes until softened.
  3. Add garlic, cumin, turmeric, and paprika. Cook 1 minute.
  4. Add lentils, diced tomatoes, and broth. Stir well.
  5. Bring to a boil, then reduce to a simmer.
  6. Cook 20-25 minutes until lentils are soft.
  7. Blend partially with an immersion blender if desired.
  8. Season with salt, pepper, and a squeeze of lemon.
  9. Serve hot with crusty bread.
