Vegetable Curry with Rice
Ingredients
- 1 can (15 oz) chickpeas, drained
- 1 can (14 oz) diced tomatoes
- 1 can (13.5 oz) coconut milk
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 tbsp curry powder
- 1 cup frozen peas
- 1 tbsp vegetable oil
- 2 cups white rice, cooked
- Salt to taste
Instructions
- Cook rice according to package directions.
- Heat oil in a large pot over medium heat.
- Add onion and cook 5 minutes until softened.
- Add garlic and curry powder. Cook 1 minute, stirring.
- Add diced tomatoes, chickpeas, and coconut milk. Stir well.
- Bring to a simmer. Cook 15 minutes.
- Stir in frozen peas. Cook 3 more minutes.
- Season with salt. Serve over rice.
